German Apple Pancake

4 eggs
1 can evaporated milk
1 1/2 cups flour
1 tsp vanilla
6-8 Tbsp butter
4 medium tart apples, peeled, cored, and sliced
1 cup brown sugar
1 1/2 tsp cinnamon
1. Preheat the oven to 425 degrees Fahrenheit.
2. Mix together the eggs, milk, flour and vanilla. Beat until there are no lumps and set aside.
3. In a 10- or 12-inch nonstick pan that's oven safe, melt the butter over medium heat. Saute the apples slices for a few minutes until they start getting soft. Mix in the brown sugar and the cinnamon.
4. Remove pan from the heat and pour batter over the apple mixture in the pan. Place pan in the oven and bake for 25-30 minutes or until pancake is puffy and golden. Remove from oven and let sit out for a couple of minutes. Then place a large plate over the pan and flip the pancake onto the plate.
