Meat Crock Loaf

4 oz tomato sauce
1 tsp Italian seasoning
1 egg, or 1/4 cup Egg Beaters
1/4 cup chopped onion
3 Tbsp dry Italian bread crumbs
1 clove garlic, pressed
pepper, to taste
3/4 lb ground beef
1/4 cup mozzarella cheese, shredded
1. In a small bowl, combine tomato sauce and Italian seasoning; reserve 1 1/2 Tbsp and set aside, covered, in refrigerator.
2. In a large mixing bowl, combine remaining tomato sauce mixture with egg, onion, bread crmbs, garlic, and pepper.  Blend well then add ground beef and blend well again. 
3. Take 2 strips of aluminum foil, each about 15 inches long, and form an "x" in the bottom of the slow cooker.  Form meat mixture into a round and place on top of foil, being careful to NOT let the meatloaf touch the sides of the slow cooker.  Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours.
4. During the last 10 minutes of cooking time, pour reserved tomato sauce mixture on top of meatloaf and sprinkle with mozzarella cheese.  Cover and cook for 10 minutes.
5. Using the foil strips, slowly and carefully pull meatloaf from slow cooker to a serving plate.  Gently pull foil strips from under meatloaf and serve.
