Poker Portato Chips

1 cup flour
4 packets raosted garlic or zesty Italian dressing mix
4 small sweet potatoes or red-skinned potatoes
vegetable oil for frying
salt and pepper
1. In a large resealable plastic bag, combine flour and dressing mix; set aside.
2. Scrub potatoes under running water and pat dry with paper towels.  Using a sharp knife or a mandoline slicer, thinly slice potatoes into round disks.  Starting with sweet potatoes, if using, add about half of the slices to the seasoned flour.  Seal bag and shake.  Arrange slices in an even layer on baking sheet; repeat with remaining potatoes.  Refrigerate seasoned potatoes for about 20 minutes.
3. Fill a large, heavy-bottomed Dutch oven a little less than half full of oil.  (Or, use a deep-fat fryer.)  Heat oil to 375 degrees F.  Using a spoon carefully add potato slices a few at a time and fry until crisp and golden, about 3 minutes.  Remove with a slotted spoon and drain on paper towels.  Repeat with remaining potato slices.
