Quinoa and Spinach Salad

1/3 cup quinoa
1 small cinnamon stick
1/2 tsp cumin
1/3 cup apple juice
1/3 cup water
2 Tbsp dried currants
21 oz white beans, drained and rinsed
5 cups chopped spinach
1 smalle apple, cored and sliced
1/4 cup apple cider vinegar
2 Tbsp honey
1 1/2 Tbsp olive oil
1. In a saucepan with a tight-fitting lid, combine quinoa, cinnamon, cumin, apple juice, and water.  Bring to a boil, reduce heat, cover, and simmer until quinoa is cooked through and liquid has been absorbed.  Remove cinnamon stick.  Stir in currants and white beans.
2. Arrange chopped spinach on dinner plates; top with apple slices and quinoa mixture.
3. In a small bowl, combine vinegar, honey, and olive oil; drizzle over salad and enjoy!
