Spicy Bean Cakes

1/4 red onion, finely chopped
2 hot peppers, finely chopped
3-4 cloves garlic, crushed
1 Tbsp olive oil
1 Tbsp cumin
2 cans black beans
1 large sweet potato
1 egg
1/2 cup bread crumbs
1. Add chopped onion and peppers to skillet with olive oil and cumin.  Saute for 2-3 minutes.

2. Drain and rinse 2 cans of black beans.  Place in bowl and mash with potato masher.
3. Add peppers and onions to mashed beans.
4. Grate sweet potato.  Add grated sweet potato, egg, and bread crumbs to bean mixture.  Mix well until it all sticks together
5. Divide into 12 balls and place the bean balls on a greased baking sheet.  Flatten into patties.
6. If you have leftover sweet potato, slice thinly and add to baking sheet in between the bean patties.
7. Broil for 10 minutes, then flip both the bean cakes and the sweet potato circles.  (Flip carefully so they don't fall apart!)  Broil for another 3-4 minutes.
8. Remove bean patties.  If you want the sweet potato circles to be crisper, place them under the broiler for 4-8 minutes more until they reach your desired crispness.

Serve with brown rice or corn-on-the-cob.
