Stuffed Pepper Casserole

1 lb ground beef
2 Tbsp chopped onion
1 cup cooked brown rice
3/4 tsp garlic salt
2 8 oz cans tomato sauce
olive oil
3 medium bell peppers, halved, seeded, and deribbed
1/2 cup shredded mozzarella
1. Preheat oven to 350 degrees. In a large skillet, brown beef, and onion, stirring occasionally; drain off fat. Stir in rice, garlic powder and 1 can of tomato sauce; heat through. Lightly coat a 9- x 9-inch baking pan with olive oil and line it with half of the sliced peppers. Pour half of the meat mixture over the peppers. Layer remaining sliced peppers on top of meat mixture and pour remaining meat mixture on top. Pour remaining tomato sauce over meat mixture. Cover with aluminum foil wrap and bake for 45 minutes. Uncover and bake for an additional 10 minutes. Sprinkle with cheese and bake 5 minutes longer or until cheese is melted.
