Mexican Chicken Skillet

Ingredients
1 Pound Chicken Breast Strips, Boneless, Skinless
2 Packets Taco Seasoning Mix (Reduced Sodium)
2 Cups Water
2 Cans Stewed Tomatoes, Undrained
2 Cups Minute Instant Rice, Uncooked (see note below)
1 Can Sweet Corn, Undrained
1 Cup Mexican Blend Shredded Cheese
4 Tablespoons Olive Oil
 
Directions
1. Heat olive oil over medium heat while cutting chicken strips with kitchen shears into bite sized pieces.

2. Sautee chicken with olive oil until no longer pink.  Chop chicken into 'bar-b-que' consistency.
3. Add taco seasoning; sautee chicken with taco seasoning until well blended.
4. Add water, tomatoes and corn.  Bring to a boil.
5. Stir in rice.
6. Reduce heat, cover.  Cook until rice is done.

7. Sprinkle individual meals with mexican cheese.

8. Enjoy!
 
Notes:
This meal is truly delicious!  I found the recipe on cooking light and made it my own by adding a few touches to it!

IF YOU WANT MORE OF A SOUP:
Reduce the rice to 1.25 cup!
