Garlic Scape Pesto

A twist on Pesto. Garlic Scapes are available at farmers markets for just a week or two in the spring. You can make a bunch of the pesto and freeze for use all year long.
Ingredients
6-7 Garlic Scapes
1 cup Olive Oil
1 cup Grated parmesean or asiago cheese
 
Directions
1. Combine scapes and oil in food processor till smooth. Mix cheese in by hand.
 
Notes:
Serve over past with olives and tomatoes.
Can be used instead of basil pesto in any dish.
