Tuna-Stuffed Tomatoes (Paul Bearer WWE)

1/2 cup chopped celery
1/4 cup sliced scallions, green and white parts
1 tablespoon lemon juice
1/4 teaspoon salt
Freshly ground black pepper to taste
1 can (6 1/2oz.) tuna, drained and flaked
1/2 cup lite mayo
2 hard boiled eggs, chopped
4 large tomatoes
1. Combine the celery, scallions, lemon juice, and salt, and add a dash of pepper.
2. Stir in the tuna, mayo, and eggs. Cover and chill.
3. When ready to serve, slice the tops off the tomatoes and remove the seeds and core. Without cutting all the way through the tomatoes, cut them into 4 to 6 wedges. Fill each tomato cup with about 1/2 cup tuna mixture.
