Ginger Raisin Bran Muffins

Ingredients
1/2 c raisins
1 1/2 c all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 c sugar
2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp salt
3/4 c bran
1 1/4 c rice OR soy milk
1/3 c canola oil
1 tsp vanilla
1/4 c chopped crystalized ginger
 
Directions
1. Preheat oven to 400.  Lightly grease muffin pan.  Soak rasins in hot water to cover, set aside while  plumpin'.
2. In large mixing bowl sift toegether flour, bakin gpowder and soda, sugar, ginger, cinnamon and salt.  Mix in bran.  Create awell in the center and add the rice milk, oil and vanilla.  Mix until just combined.  Drain raisins and fold in along with crystallized ginger.  Fill each muffin cup and bake 20-22 min until done.
