This is my own version of dal. It requires little prep, so it is very easy to make. I use my own garam marsala blend, but the store bought variety should do. Serve over rice or with naan wedges. It is even better after setting overnight in the frige.
1 cup lentils, rinsed
3 cups vegetable broth
1 tablespoon coconut oil
1 onion
5 cloves garlic, sliced
2 teaspoons garam masala
1 teaspoon cumin
1/2 teaspoon ground ginger
1/2 teaspoon cayenne
1 can diced tomato
cilantro (optional)
1. Place lentils and broth in a large saucepan, and bring to a boil.
2. Reduce heat, cover, and simmer about 40 minutes until lentils are tender and have lost their shape. Add water as needed.
3. Heat the oil in a skillet. Add the onion and garlic and saute over medium heat until the onion is translucent.
4. Add the tomato and seasonings to the onion. Stir and bring to a simmer. Add the onion mixture, cilantro, and salt to the lentils and simmer about 5 minutes.
