Quinoa Pudding

This recipe makes a good snack, breakfast, or light dessert.

Quinoa is a South American grain that has been cultivated for thousands of years. It is 15% protein and contains all essential amino acids.
1 cup quinoa, rinsed & drained
2 cups water
2 cups apple juice
1 cup raisins
2 tbsp lemon juice
2 tsp ground cinnamon
salt to taste
2 tbsp honey
2 tsp vanilla extract
1. Place quinoa in a medium saucepan with water. Bring to a boil over high heat. Cover pan, lower heat, and allow to simmer until all water is absorbed and quinoa is tender, about 15 minutes.
2. Mix in apple juice, raisins, lemon juice, cinnamon, and salt. Cover pan and allow to simmer for 15 minutes longer.
3. Stir in honey and vanilla extract. Serve warm.
