Blueberry Lemon Squares

The perfect combination of sour and sweet! Each flavor mellows and enhances the other, with both keeping the best parts of their flavors. Absolutely delicious, and a must-try!
Ingredients
Crust
1 cup softened butter
1 cup powdered sugar
1 tsp vanilla
2 cups flour
Filling
1/2 cup sugar
3 Tbsps flour
1 lemon (juice & zest)
1/8 tsp salt
3 eggs
2 cups blueberries
 
Directions
1. Heat oven to 400 degrees and coat a 9-inch square dish with cooking spray.
2. In a medium/small bowl, beat butter, sugar, and vanilla until fluffy.  Add the flour and mix until it forms small crumbs.
3. Press about 2/3 of the mixture into the bottom of the dish - set the rest aside.
4. Bake for 12-15 minutes until lightly browned.  Remove and reduce oven to 350.
5. In a medium/small bowl - mix sugar, flour, zest, and salt.  Add the eggs and lemon juice.  Whisk until smooth.
6. Spread the blueberries over the crust and pour filling on top.  Sprinkle on remaining topping.
7. Baker for 30-40 minutes, or until the topping is golden brown and the filling is puffed.
8. Let cool completely on wire rack and cut into squares.

Makes 16 squares.
