Rosemary Focaccia Bread

  • Currently 4/5
A delicious Italian classic that's easy, quick, and a great pair to any Italian dish or soup.
4 tsps olive oil (divided)
1/3 cup finely chopped onion
1 10-oz serving refrigerated pizza dough
2 tsps refrigerated minced (or finely chopped) garlic
.5 tsp kosher salt
1 Tbsp chopped fresh rosemary
1. Preheat oven to 400 degrees.  Grease a baking sheet.
2. Heat 1 tsp olive oil in a small skillet over medium-high heat.  Saute onion in oil, stirring continually, until browned (about 3-5 minutes).  Remove from heat.
3. Knead underneath pizza dough and shape into a 14 x 11 inch rectangle, focusing on the edges to get an even thickness.  Place on prepared baking sheet.

4. Drizzle olive oil over the dough, using the back of a spoon to fully cover dough.
5. Sprinkle with garlic, kosher salt, sauteed onion, and rosemary, or other desired toppings.  *Make sure you get an even sprinkle... less is more when it comes to the salt.
6. Bake until lightly browned, about 11 minutes.
7. Serve with an olive oil dip (olive oil, parmesan, salt, coarse pepper, garlic, tomato, pepper, etc) or your favorite Italian soup or main course!

This is a BASIC focaccia recipe... many ingredients, such as parmesan cheese, roasted pepper, sun dried tomatoes, chopped ham, and pretty much anything else you can imagine, can be added on top to taste for variation!

Also, olive oil adds flavor.. so use liberally if desired.  Thawed or refrigerated bread dough can also be used, but use extra olive oil, as bread dough is drier than pizza or focaccia dough.
