Snowman Cheese Ball

A festive cheese spread for the holidays when easily constructed into a snowman, or can be made into a traditional cheese ball, spread, or dip. Served with crackers and vegetables, this is a classy addition to any party.
2 cups shredded 4-cheese blend
1 8-oz pkg cream cheese, softened
1/4 cup finely chopped fresh chives or green onions
1 2-oz pkg slivered almonds, toasted
1/8 tsp ground red pepper, or to taste
1/4 cup grated Parmesan cheese
1 baby carrot
1. Mix cheese blend, cream cheese, chives, almonds, and red pepper well.
2. Cover and refrigerate for 1 hour.
3. Divide mixture into 3 balls - small, medium, and large.  Can also transfer to serving bowl as-is for a non-snowman cheeseball.
4. Roll mixture in parmesan cheese.

5. Arrange on serving dish, small to large, like a snowman lying down.
6. Decorate with peppercorns for eyes, mouth, and buttons, with a carrot for the nose.  A green onion strip around his neck makes a scarf.
7. Surround with crackers and/or cut-up fresh vegetables and serve.
Serves 16-20, but in my experience, many more.

Serve with crackers and/or cut-up fresh vegetables. 

Can be slightly microwaved for a softer spread, or heated more for a melted dip.  Sprinkle left-overs over salsa and microwave for a heated mexican dip.

Can also have raisin eyes, sliced black olive buttons, a silver crescent mouth, or two pretzal sticks for arms.  Could also give him a cute vanilla wafer-marshmallow hat stuck together with some of the cheese mixture.
