Spicy Black Bean and Corn Warmed Salsa

A delicious and easy side, or hearty appetizer with corn tortilla chips! Very vesatile to suit your tastes.
1 cup frozen or canned corn (drained)
1 cup black beans (cooked or undrained from can)
1/4 cup salsa (with preffered spice level)
handful mexican mix cheese (optional)
1. Mix corn, black beans, and salsa in a microwave safe bowl and heat for 2 minutes, or mix in a small saucepan over medium heat until the mixture is heated.
2. Spinkle cheese over top for garnish and added flavor!

Serves 2-4

For a fresh and lighter taste, rinse black beans with cold water and then mix with juice from 1 lemon.

For added garnish and fresh taste, add mint leaves!

Can be made for more with equal parts corn and beans, and 1/4 the amount of salsa.
