Three Cheese Tortellini

Tortellini, a ring-shaped pasta often filled with cheese or meat, is a classic Italian dish that is said to have been inspired by the navel of Roman goddess Venus. Since it's creation, tortellini has become an Italian favorite, reaching now around the globe. This easy recipe exemplifies classic tortellini utilizing fresh cheese and pasta!
1 batch fresh pasta dough
1/2 cup ricotta cheese
1/4 cup grated parmesan
1/4 cup shredded mozzarella
1 egg
1/4 tsp fresh ground black pepper
1 pinch freshly grated nutmeg
1 egg mixed with 1/2 tsp water
1. In a bowl, combine all ingredients, except for pasta and egg wash.
2. Using fresh pasta recipe, roll out your dough either by hand or press.  Cut into 3 or 4 inch rounds with a cookie cutter or glass.

3. Place 1/4 tsp cheese mixture (about the size of a nickle) into the center of each round.
4. Brush egg wash on the bottom half of the round and fold over to seal.
5. Fold back around your finger and turn down the edge to form a tortellini.
6. In a half gallon of rapidly boiling salted water, add the tortellini in batches.
7. Cook for 3-5 minutes, or until they float to the surface.  Remove with a strainer, and place in strainer or on dish.
8. Serve with desired sauce!
