Breakfast Sausage & Hash Brown Casserole

A great casserole to assemble the night before and pop in the oven in the morning.
1 lb sausage, casings removed
30 oz hash browns
1 1/2 tsp salt
1/2 tsp pepper
1 cup cheddar cheese shreaded
4-6 eggs
2 cups milk
1. Preheat oven to 350. (If baking right away)
2. Brown the sausage and break up the chunks into small pieces with the wooden spoon while cooking.
3. Brown the hash browns according to package directions.
4. Combine the remaining ingredients (reserve some cheese for topping) in a large bowl, mix.
5. In a greased 9 X 13 oven pan combine the sausage and hash browns. Pour the egg mixture over the sausage.
  (If baking the next morning, cover the pan and refrigerate overnight. Remove from frige in morning.)
Bake for 35-40 minutes. Just before taking out of oven sprinkle remaining cheese over top.
You can add chopped peppers and/or onions to the egg mix, red and green are a nice color addition especially for christmas morning.
You can substitute sliced/chopped ham for the sausage.
