Banana Bread

This recipe is adapted from the "Best Banana Bread" submitted by lkadlec to I don't usually care for banana bread but I love this recipe and so does my whole family. I usually make it on Saturday mornings, and it's gone by Monday.
1/2 cup butter
1/2 cup sugar
2 eggs, beaten
3-4 bananas, very ripe
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla (optional)
1. Preheat oven to 350-degrees. Grease and flour a loaf pan.
2. Cream the butter and sugar. Beat in the eggs and mashed bananas. Mix well.
3. Sift together the flour, baking soda, and salt. Add to the banana mixture. Add vanilla. Mix just until combined. Do not over mix.
4. Pour into prepared loaf pan. Bake at 350-degrees for 55 minutes.
Yield: 1 loaf (10 servings)

Keep well, refrigerated.
