Chicken Marengo

This is another favorite that my mom made for us when we were kids. Chicken is simmered in a stewed tomato mixture and served over rice.
2 Tbsps butter or margarine
2 1/2 - 3 pounds chicken parts (or breasts)
1 (1 lb) can peeled tomatoes
1 (4 oz) can sliced mushrooms
1 clove garlic, minced
1 envelope Lipton onion soup mix
1. In a large skillet, melt butter and brown chicken; remove from pan. Add other ingredients to pan and stir thoroughly. Return chicken to pan. Simmer covered, stir occasionally 45 minutes, or until chicken is tender.
Yield: 6 servings
