Cowboy Skillet Recipe

Zesty meat, beans and peppers are topped with sweet cornbread. This recipe is extremely adaptable. Add jalapenos, cheese, corn, or whatever you like to make this yours.
1 pound ground beef
1 small onion
2 small red bell peppers
1 (15 oz) can baked beans
1 packet taco seasoning
1 (8.5 oz) box cornbread mix*
1. Preheat the oven to 350-degrees F.
2. Cook the beef, onion, and peppers in a large, oven-proof skillet. Cook until meat is no longer pink, and the onions are translucent. Add the beans and taco seasoning and mix well. Heat through and spread the mixture evenly on the bottom of the skillet.
3. Prepare the cornbread batter according to the instructions on the box. Spoon over the beef mixture and spread evenly. Place skillet in the preheated oven and cook 20 minutes, or until toothpick inserted in cornbread comes out clean.
* I use Jiffy cornbread mix. For that you'll also need 1 egg and 1/4 cup milk.
