Dal Lentils

You can use any type of lentil you want; however, I tend to go for the red ones as I love the resulting color. To make this SCD safe, be sure to soak the lentils according to the directions in Breaking the Vicious Cycle.
1 cup dry red lentils, rinsed well
4 cups water
1 onion
1 tomato
2 tsps ginger paste
1/2 tsp turmeric
2 Tbsps Ajika dal spice (or spices of your choosing)*
1 Tbsp ghee
1 onion, chopped
1 tomato, chopped
1. Place the water, lentils, ginger paste and turmeric in a large pot. Bring to a boil
2. While the lentils come to a boil, melt the ghee in a separate skillet. Add the onions and seasoning, and saute until the onion is translucent. Add the tomatoes and stir.
3. Once the lentils have come to a boil, add the tomato and onion mixture, cover and simmer on low for 20-30 minutes.
- Try seasoning with lime or lemon juice, and garnish with fresh cilantro or coriander leaves.

- Serve with rice or bread (naan).

*You can try adding some or all of the following spices in place of the ready-made seasoning: cumin or mustard seeds, ground coriander, ground cumin, fresh curry leaves, cayenne, and hing or asafetida.
