Fried Rice with Chinese Sausage

1/4 C canola oil, divided
2 eggs, lightly beaten
1 Tbsp Chopped ginger
1 Tbsp chopped garlic
1-2 C Frozen peas and carrots, thawed
3 links Chinese sausage, diced
1 small bunch scallions, sliced, divided
4 C cooked white rice
1/4 C low-sodium soy sauce
1 Tbsp rice wine vinegar
1. Heat 2 Tbsps canola oil in a wok or large frying pan over high heat. Add the beaten eggs and fry until they are fully cooked. Transfer them to a plate. Add the remaining oil, ginger, garlic, peas and carrots. Add the sausage and half the scallions and stir fry for one minute. Add the cooked rice, soy sauce and vinegar. Sir-fry until the rice is hot, about 2 minutes. Sir in the reserved eggs and transfer to a serving dish. Garnish with remaining scallions and serve.
