Fruit Jam

This recipe from is very versatile. Not only can you use whatever fruit you wish, you can also vary the consistency and sweetness. Try straining the mixture at the end to make jelly, or leave out the gelatin to make syrup.
12 oz (or 2 cups) frozen fruit (i.e., strawberries, blueberries, blackberries, etc.)
1/4 cup honey
1 1/2 tsps unflavored gelatin
1. Bring fruit to a boil over medium heat. You may or may not wish to smash it with a potato masher until you get it to the desired consistency. Add honey and simmer for 10 minutes. Remove from heat, sprinkle gelatin over mixture and stir until the gelatin is distributed throughout with no lumps. Let cool and refrigerate.
