Shortcut Stuffing

I found this recipe on and it was a hit at my family's last Thanksgiving. The original recipe did not call for raisins; however, I felt it needed a little something extra. You can leave them out, or substitute dried cranberries as well.
2 medium onions, minced
2-3 stalks celery
2 Tbsps butter, plus additional
1/2 tsp poultry seasoning
2 cups chicken broth
Hot water
3/4 cup golden raisins
2 (6 oz) packages Stove Top seasoned stuffing mix
1. Sautee onions and celery in 2 Tbsps butter.  Sprinkle with poultry seasoning.  Set aside to cool slightly.  Toss this mixture into your favorite dry stuffing mix.
2. Pour broth into a sauce pan. Add enough water and butter to make up the required liquid and butter amounts specified in the directions for both stuffing mix boxes.  Heat to boiling and set aside.  Add the raisins to the liquid and let soak until plump. Pour over the stuffing/vegetables mixture, mix well.
3. Place stuffing in a baking dish; cover and bake for 15-25 minutes at 325-degrees Fahrenheit.
Yield: 6 servings

If you like, you can also add 1c of toasted and coarsely chopped walnuts.
