Weekday Chicken

This recipe is not a new concept, but I started making this version during the Coronavirus pandemic using ingredients I typically have on hand in the pantry. The spices can be varied depending on what you have. The result is a moist and flavorful chicken breast even my picky toddler loves.
Ingredients
2 lbs boneless, skinless chicken breasts
Salt, to taste
1/2 C mayonnaise
4 cloves garlic, minced
1 tsp garlic powder
1 tsp dried basil*
 
Directions
1. Preheat oven to 350-degrees F, and spray a 13x9" dish with nonstick spray. Place chicken breasts in the fish and sprinkle with salt, to taste.
2. In a small bowl, mix together mayonnaise, garlic, and seasonings. Spread evenly over seasoned chicken breasts. Bake until instant-read thermometer measures 160-degrees.
 
Notes:
*use any and as many dried spice(s) you like. You can also use spice mixes such as Mrs. Dash or Season All, just pay attention to the amount of salt in those mixes and omit the stand-alone salt as needed.
