Ingredients
12 dried Chinese mushrooms (black)
2 teaspoons cornflour
250 ml vegetable stock
1 tablespoon tamari
1 tablespoon dry sherry
1 1/2 teaspoons caster sugar
2 teaspoons sesame oil
450 g baby bok choi, sliced
2 tablespoons groundnut oil
3 cloves garlic, peeled and lightly crushed, but left whole
4 thin slices ginger, peeled
1/4 teaspoon salt, or to taste
