Skillet Macaroni and Cheese*

A creamy cheesy macaroni  that wins every time--great the next day too!
Ingredients
4 tbsp butter
1/2 onion, finely chopped
1/4 tsp oregano
1 tsp salt
1 tbsp flour
3-1/2 C half and half
8 oz dry macaroni, fusili or penne noodles (about 2 C)
2 C shredded sharp cheddar cheese (use from a block, not pre-shredded kind)
 
Directions
1. Melt the butter in a large skillet over medium-low heat. Add the onion and cook for 5 minutes, stirring occasionally until onion is soft and translucent. Stir in the oregano, salt and flour and cook for 1 minute more.
2. Add the half and half and pasta and bring to a boil. Cover, reduce heat to low and simmer for 12-15 minutes or until pasta is cooked through.
3. Add the cheese and stir until melted. Serve immediately.
