Cape Breton Shortbread Cookies By Lauren Dawson-Scully

These cookies are special because they came from my great grandfather who died in 2005. He came from Scotland, Cape Breton. They used to make these cookies all the time. Whenever I go to my great grandma's house, I eat them there all the time. I love them and I hope you will like them too.
1 cup butter
1/2 cup white sugar
2 cups sifted all purpose flour
1. Preheat oven to 350 degrees. 
2. In a medium bowl, beat the butter and sugar with an electric mixer until light and fluffy
3. Stir in flour by hand until dough is smooth
4. Add extra flour when dough can't be rolled out
5. Roll dough to 1/4 inch thickness and cut in shapes with cookie cutter
6. Place on ungreased cookie sheet one inch apart and bake for 12-15 minutes until edges are slightly brown 
7. Cool on cookie sheet for a few minutes
