Molten Chocolate Cakes

7 tablespoons butter
Atkins Bake Mix for dusting
2 ounces unsweetened chocolate, coarsely chopped
1 tablespoon Atkins Bake Mix
2 eggs, at room temperature
2 egg yolks, at room temperature
8 packets sugar substitute
1 teaspoon vanilla extract
1. Heat oven to 375 F.
2. Generously grease four 6-ounce custard cups with 1 tablespoon butter and dust with bake mix. Place cups on a baking sheet.
3. Melt remaining 6 tablespoons butter and chocolate in a double boiler.
4. Remove from heat; cool.
5. Stir in 1 tablespoon bake mix.
6. Transfer to a large bowl.
7. With an electric mixer on high, beat eggs, egg yolks, sugar substitute and vanilla until almost firm peaks form, about 4 minutes.
8. In three additions, fold egg mixture into chocolate mixture.
9. Divide batter in cups.
10. Bake 8 to 9 minutes until toothpick inserted near edge comes out clean and inserted in center comes out coated with batter.
11. Cool 3 minutes.
12. Run knife around edge, turn upside down to release onto serving plates. Serve immediately.
