Ropa Vieja Hash

Ingredients
1 cup turnip, diced small
1 cup cauliflower, diced small
1 medium onion, diced
1 pasilla chili, diced
OR 1 green bell pepper, diced
red pepper flakes to taste
1 clove garlic, crushed
2 tablespoons oil
4 cups Ropa Vieja (see recipe)
1 cup Ropa Vieja broth (see recipe)
1 cup cilantro, chopped
 
Directions
1. Put cauliflower and turnip into a microwaveable container with a lid, add a tablespoon or so of water. Microwave on high for 7 minutes.
2. Sautee onion, pepper, and garlic in oil in large pan over medium heat.
3. Add Ropa Vieja after a few minutes. Stir.
4. Sautee for 10 minutes, stirring often.
5. Add cauliflower and turnip to pan and sautee for 5 more minutes.
6. Add Ropa Vieja broth and some of the vegetables. Stir.
7. Let everything simmer together until the broth has evaporated, stirring often (about 5-10 minutes).
8. Serve topped with cilantro.
