Lasagna or large shells noodle substitute

Ingredients
8 Eggs
2 tbsp Skim milk or evaporated skim milk
1 tsp Salt
1/2 tsp Black pepper
 
Directions
1. Beat all ingredients together very well.
2. Heat a 12" nonstick frying pan, spray with olive oil flavored spray.
3. When hot, spoon about 3 BIG spoonfulls of the eggs in -- just BARELY enough to coat the bottom of the pan.
4. Let it cook until there's not wet spots, loosen the edges and slide out onto a plate.
 
Notes:
Makes about 6 crepe style "noodles"
