Blueberry Muffins

Makes 8 large muffins
1 1/2 C flour
3/4 C sugar
1/2 t salt
2 t baking powder
1/3 c vegetable oil
1 egg
1/3 c milk
1 c blueberries
1. Preheat oven to 400.  Grease muffin cups  or line with papers.
In Med bowl, mix flour, sugar, salt and baking powder.
In measuring cup add oil, egg and milk (to top) of 1 cup.
Mix liquid with flour.  Fold in blueberries.  Fill cupcake maker to top and sprinkle crumb topping if desired. 
TO MAKE CRUMB TOPPING-enough for 2 batches of muffins.  Put extra in baggie and fridge.

Mix 1/2 c brown or white sugar, 1/2 c flour-try this amount-last time first batch topping was too runny-, 1/4 c softened butter, 1 1/2 t cinnamon. Mix with fork, sprinkle over top before baking. 
In oven bake for 20-25 minutes.  In cupcake maker 15 minutes.
Chopped walnuts may be added to batter or topping.
