Red Beans and Rice

  • Currently 4/5
1 pound Turkey Polish Kielbasa cut into bite sized pieces
1 medium onion diced
1 green bell pepper diced
2 Tbsp minced garlic
2 can kidney beans rinsed & drained
1 can petite diced tomatoes rinsed & drained
2 bay leaves
2 Tbsp Worcestershire Sauce
2 Tbsp Chef Paul Prudhommes Poultry Seasoning
1/2 tsp red pepper (ground or flakes)
3 cups Chicken broth
1/2 cup cooked rice
1. Cook turkey kielbasa, onions, bell pepper, and garlic until kielbasa is completely cooked.

2. Add beans, tomatoes, and bay leaves. Cook for 5-7 minutes.

3. Add the worcestshire sauce, rest of the spices, and chicken broth.
4. Simmer for 15 minutes. Covered.
5. Add rice, remove from heat, and allow to sit for 10 more minutes.
This is very easy to double and triple. And if you need a quick meal, this is a great one.

This version is very thick, so if  you want it more like a soup, add more chicken broth.

I like mine spicy so I added more of the Chef Paul's & red pepper.
