Banana Bread

I have fond memories of Mom's banana bread... mmm :)
Ingredients
Dry ingredients
2 cups flour, all-purpose
3/4 cup sugar
1 1/2 tspn baking powder
1/2 tspn baking soda
1/4 tspn cinnamon, ground
1/8 tspn nutmeg, ground
1/4 tspn salt
Wet ingredients
5 bananas, brown, mashed
2 eggs, beaten
1/2 cup butter, melted
 
Directions
1. Preheat oven to 350F
2. Grease bottom only of bread pan
3. Mash bananas in mixing bowl, beat eggs, melt butter
4. Mix dry ingredients and wet ingredients separately
5. Mix dry and wet together gently until just mixed, some lumps should remain
6. Pour batter into pan
7. Bake for 40 minutes, and continue to check every 5 minutes, until toothpick comes out clean
8. Cool in pan on wire rack for about 10 minutes, then remove from pan, if desired.  Serve in thick slices with butter.
 
Notes:
Servings: 1 loaf, enough for about 4 people

Note: Mom said her recipe was from the checkerboard cookbook.  This is the recipe from the checkerboard cookbook.  I thought Mom only used 3 bananas?  I also changed sugar from 1 cup to 3/4 cup... I think it would be fun to add almonds or some other nut maybe... it says amount for nuts is 1/4 cup.
