Batata Kanda Nu Shaak

One of Shital's favorites.  A classic Gujarati dish.
Ingredients
Tempering
2 Tbs ghee
1/2 tspn mustard seeds
1/2 tspn cumin seeds
3/4 tspn asafoetida
Vegitables
3 potatos, cubed
1 1/2 onions, chopped
Seasonings
3/4 tspn turmeric
1 tspn cumin powder
1/2 tspn coriander powder
1/8 tspn chili powder
1 tspn salt
2 cups water
 
Directions
1. Heat ghee in skillet over medium heat
2. When ghee is hot, add tempering seasonings
3. When seeds crackle, add onions and cook for one minute
4. Add potatoes and cook about 5 minutes
5. Add seasonings, cover, and simmer till done
6. Serve with pan-toasted bread.
 
Notes:
Servings: 2 as main dish, 4 as side dish
