Broiled Lamb Rib Chops with Shallot & Hot Pepper Rub

6 lamb rib chops, trimmed of excess fat
1/3 cup shallots, finely chopped
1/4 tspn crushed red pepper
1. Preheat oven to broil
2. Mix shallots and pepper in small bowl
3. Rub mixture into both sides of chops.  Use up all of the mixture.  Sprinkle both sides with salt.
4. Broil on top rack for about 15 minutes for well-done, or less depending on taste, then flip.
5. Broil about another 10 minutes.  You want both sides to be somewhat brown and have a few crispy pieces, so alter cooking time accordingly.
6. Serve
