Browned and Braised Cauliflower with Indian Flavors

Yogurt creates a rich and satisfying sauce that tames and blends the flavors of the spices.
2 Tbs olive oil
1 large head cauliflower, florets
1/2 medium onion, sliced thin
1 tspn cumin, ground
1 tspn coriander, ground
1 tspn turmeric
1/3 tspn red pepper flakes
1/4 cup cilantro
1 tspn salt
1/4 tspn pepper
Yogurt mixture
1/2 cup yogurt, plain
1 Tbs lime juice
1/4 cup water
1. Combine yogurt mixture ingredients and set aside
2. Heat large skillet over medium heat, then add oil
3. Cut cauliflower into florets
4. Add florets to oil and saute, stirring occasionally, for 2-3 minutes
5. Slice onion
6. Add onion and continue sauteing until florets begin to brown and onion softens, about 5 minutes, covered
7. Stir in cumin, coriander, turmeric, and pepper flakes, and saute for 2 more minutes, covered
8. Reduce heat to medium-low and add yogurt mixture.  Cook another 2-3 minutes.
9. Add cilantro, and cook another 2-3 minutes
10. Add salt and pepper, and cook till done
11. Serve.  This goes well by itself, or served with Indian rotli/chapati/naan.
