Chicken-Fried Mini Steaks

Chicken-fried steak, made tastier and more fun in mini form.
1 lb beef, ground
1 cup milk
1 cup saltine crackers, crushed
1 tspn pepper
oil for cooking
1. Heat cast iron skillet over medium heat
2. Add oil
3. Put milk in bowl
4. Put crackers and pepper in another bowl and mix
5. Form beef into small patties about 2 1/2" in diameter
6. When oil is hot, dip a patty into the milk, then the crackers, then carefully place into oil
7. Repeat until skillet is full, keeping about an inch of space in between patties.  Cook for about 5 minutes, or until bottom is nicely browned
8. Flip, and cook for another 5 minutes, or until bottom is browned
9. Put on plate, and repeat until all patties are cooked
Goes well with plenty of pepper to dip in, or some like ketchup
