Cinnamon Rolls

Mmmm  The Best cinnamon rolls recipe.
Ingredients
Dough
1/2 cup milk
4 Tbs butter, unsalted, cut into 1/2" pieces
1 package (2 1/4 tspn) dry active yeast
1/2 cup water, warm
1/3 cup sugar, white granulated
2 eggs
1 1/2 tspn salt
3 1/2 cups flour, all-purpose
Filling
1/3 cup sugar, white granulated
2 Tbs cinnamon
1/2 cup milk
Icing
1 1/4 cups sugar, confectioners
2 Tbs milk
1/2 tspn vanilla
 
Directions
1. Heat milk and butter in small saucepan over medium-low heat until butter melts.  Cool to lukewarm.
2. Sprinkle yeast over warm water in bowl
3. Beat sugar and eggs into yeast mixture
4. Add milk mixture, salt, and 2 cups of flour: Mix until thoroughly blended
5. Add the rest of flour gradually and mix until dough is smooth and comes away from sides of bowl.
6. Lightly oil bowl, then replace the dough
7. Cover and let rise until double in size, about 2 hours
8. Punch down dough
9. Grease baking pan
10. For filling, mix sugar and cinnamon in bowl
11. Roll out dough with a rolling pin into an evenly shaped 12 x 16" rectangle.
12. Brush dough liberally with milk
13. Sprinkle with an even layer of the cinnamon mixture, leaving a 1/2" border along one of the long sides
14. Roll, beginning with the long side of the rectangle that has filling on it all the way to the edge.  Use both hands to pinch dough with fingertips as you go, sealing edges firmly to form a seam along the long sides (do not seal ends).
15. Using dental floss, cut formed roll in half, then cut each half in half again, and then cut each piece into 3 rolls for a total of 12 rolls.
16. Place rolls on pan, leaving some space between them.
17. Cover loosely and allow to rise until double with size, about 1 hour.
18. Preheat oven to 350F
19. Bake until golden brown, about 25 minutes
20. Invert rolls onto wire rack and cool, about 10 minutes
21. For icing, whisk sugar, milk, and vanilla in bowl until smooth
22. Reinvert rolls, and drizzle icing onto rolls.  Serve.
23. Put dough on lightly floured surface and knead until smooth and elastic, about 15 minutes.
