Creole Buffalo Melt

Buffalo meat is the tastiest for classic burgers, creole seasoning gives it plenty of flavor, and whole grain bread keeps it all together without making it messy and hard to eat like huge buns do, and also adds a little flavor.
Ingredients
1 Tbs butter
2 thick slices onion, yellow or white
2/3 lbs buffalo, ground
1 tspn creole seasoning
4 slices bread, whole grain or white
2 Tbs mayonnaise
1 Tbs ketchup
2 thick slices cheese, cheddar
1 avocado
 
Directions
1. Heat cast iron skillet over medium heat
2. Add butter.  When melted, add onion slices.   Cook for about 1 minute, then flip over onion slice and cook for another minute.
3. Toast bread in toaster
4. Divide buffalo meat in half, and form 2 patties
5. Push onion slices to opposite sides of the skillet, and add patties to skillet
6. Sprinkle 1/2 tspn of creole seasoning on each patty
7. Partly cover and cook for 6 minutes
8. When bread is toasted, spread mayonnaise on each piece
9. Spread ketchup on 2 of the slices that will become the bottom pieces
10. Mash avocado in bowl
11. Divide avocado in half and carefully put on top of ketchup
12. After patties have cooked for 6 minutes, flip, then cover partially again and cook for 5 more minutes
13. When patties are done, place on top of avocado.
14. Place cheese slices on top of patties
15. Place onion on top of cheese, and top with remaining toast
16. Cut in half and serve

Ground chuck buffalo is the best cut for this recipe, but most stores only serve one variety of "ground buffalo".

Form patties delicately - forming balls then pressing down with a press/plate/cutting board makes for a hard, dense burger.  Form a patty gently with your fingers, just enough so it won't fall apart.  This will keep lots of areas for juice to collect inside, and will make for much tastier burgers.

Feel free to grill instead of pan-frying!
