Dal Moong

Basic version of moong yellow dal.
1 Tbs ghee
1/2 tspn cumin seeds
1 cup moong yellow lentils
2 1/2 cups water
1/2 tspn turmeric
1 tspn salt
1. Heat pan over medium heat
2. Add ghee
3. When ghee is hot, add cumin seeds and cook until they crackle, about 30 seconds
4. Add lentils, stir, then add water and turmeric and stir
5. Cover tightly and cook about 5 minutes, until dal is boiling
6. Reduce heat to low and cook about 25 minutes, or until lentils are cooked
7. Add salt and simmer one more minute
8. Serve either alone, or with Indian rotli/chapati/naan or pan-fried bread, or rice/grains
Servings: 2 as main dish, 4 as side dish

You can add many things and try many variations to this recipe, like adding different spices for the tempering, or various vegetables into the dal after it's cooked.
