Egg Salad Sandwich

Your basic egg salad sandwich, crust-free
4 eggs, hardboiled, peeled
4 slices bread, white, crusts cut off
2 Tbs mayonnaise
1 Tbs mustard
1/4 tspn pepper
1. Cut bread slices in half to make half-sandwiches
2. Cube eggs into small cubes
3. Mix eggs, mayonnaise, mustard, and pepper, and add more or less to taste
4. Carefully spread a thick layer onto half the bread slice halves
5. Top with remaining bread slices.  Serve
