Egg Sandwich

The classic egg sandwich
1 Tbs butter
1/8 cup onions, chopped
2 eggs, slightly beaten
1 tspn milk
2 slices bread
1 Tbs mayonnaise
1/2 Tbs ketchup
1 slice cheese, cheddar
1. Heat small (6-8") skillet over medium-low heat
2. Mix eggs & milk
3. Add butter to skillet.  When melted, add onions and fry till they start to turn golden
4. Toast bread
5. Add egg mixture to skillet and cook until the top is firm
6. When bread is toasted, spread mayo on both pieces, and ketchup on top of the mayo on one piece only
7. When egg is firm, flip and turn off heat
8. Place cheese slice on egg
9. Let cook a few seconds, then slice egg & cheese in half with flipper
10. Place egg halves on bread slice with ketchup
11. Top with other bread slice, cut in half, and serve.

Also try adding various spices like pepper on top of eggs, and different types of cheese.  Green chilli also makes a nice addition - mix in with eggs & milk.
