Empanadas

A bit difficult to make, but worth the effort.  WANT TO TRY WITH FROZEN CUBED SQUASH
Ingredients
Dough
2 cups flour, all-purpose
1 tspn salt
4 Tbs butter
4 Tbs shortening
5 Tbs water
1 egg, beaten
Filling
1 medium acorn squash, or equivalant frozen cubed squash
2 Tbs oil
1 cup onions, chopped
1/2 cup green bellpepper, diced
1 cup corn
1 tspn paprika
1 tspn cumin, ground
1/2 tspn chili powder
1 tspn crushed red chilis
2 Tbs raisins
2 Tbs olives, green, quartered
1 tspn salt
1/2 tspn pepper
 
Directions
1. Preheat oven to 350F
2. Cut squash in half lengthwise and scoop out seeds
3. Sprinkle with some salt (not with salt for filling, additional salt)
4. Place in baking dish with cut side up.
5. Pour 1/4" of water in bottom of pan and cover loosely with foil
6. Bake for 30 minutes or until tender, but on the firm side.  If you are using frozen squash, cook until tender but on the firm side.
7. Mix flour & salt in large bowl
8. Cut in butter & shortening till well blended
9. Add water and mix to make smooth dough.
10. Cover and set aside.
11. Heat large skillet over medium-low heat
12. Add oil
13. When oil is hot, add the onions, bellpepper, corn, and spices, and cook till bellpepper is soft.
14. When squash is cool enough to handle, cut into cubes
15. Add squash, olives, and raisins to skillet and remove from heat
16. Roll dough into a thin sheet, slightly less than 1/8" thick
17. Preheat oven to 400F
18. Cut in 5" circles.  Recombine extra dough, roll out, and make more circles until all dough is used.
19. Place about 2 Tbs of filling on top of each circle, in the middle but slightly to one side to make it easy to fold the dough in half
20. Fold each circle in half and press firmly along the edges to seal
21. Place on ungreased cookie sheet
22. Brush with egg
23. Bake for about 15-20 minutes, until lightly browned.  Serve.

These take a lot of time and patience to make, especially if you start with a whole squash.  Using frozen cubed squash makes things much easier!
