Fried Mashed Potato Patties

A great holiday breakfast food made from leftovers
Ingredients
leftover mashed potatoes
butter for frying
 
Directions
1. Heat skillet over medium heat
2. Add enough butter to generously coat and swirl around
3. Make a small ball of mashed potatoes, and flatten into a patty
4. Fry patty until it's golden on one side, then flip and fry again till the other side is golden.
5. Serve.
