My mother's version of the chimichanga
5 tortillas, flour, burrito size
1 can refried beans
1 Tbs lime juice
1 cup cheese, cheddar, grated
olive oil for cooking
1. Heat skillet over medium heat
2. Mix beans & lime juice in small bowl
3. Lay out tortillas and divide beans equally among them, placing the beans in the center of each tortilla
4. Add enough oil to skillet for shallow frying
5. With a spoon or spatula, slightly spread out beans into a rough square shape about 3 inches across
6. Sprinkle cheese on top of beans
7. Fold opposite sides of tortilla over beans, then the other 2 sides over those, making a square
8. Place burritos in skillet, flap sides down.  Only place as many as you can fit in a single layer.  Usually I just cook 2 at a time in my 10" cast iron skillet
9. When golden on the bottom, flip and cook until the other side is also golden
10. Place on paper towel to drain
11. Serve with ketchup and salsa
