apricot, cornmeal and sage cookies

this has been the recipe that most people comment and rave about. everybody really likes this cookie because it's so unctuously good and they're surprised to find out it includes sage.

yields: about 36 cookies
Ingredients
1/2 c (4 oz / 113 gr) unsalted butter, softened well
2/3 c (5 oz / 134 gr) sugar
1 large egg
3/4 c + 2 tbsp (3.5 oz / 99 gr) all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/4 c (1.5 oz / 43 gr) cornmeal, coarse
1/4 c (1.5 oz / 43 gr) cornmeal, fine
1/2 c (3 1/2 oz) chopped dried apricots
2 tbsp finely chopped fresh sage leaves
 
Directions
1. preheat oven to 350°F. and lightly grease 2 baking sheets.
2. in a large bowl beat together butter and sugar until pale and fluffy, about 2 minutes; add egg and beat in to combine.
3. in a separate bowl, whisk together flour, baking soda, cornmeals and salt.
4. add flour mixture to butter mixture and stir with a wooden spoon just until it comes together; add apricots and sage, and stir until combined.
5. drop teaspoons of dough about 2 inches apart onto baking sheets (these cookies will spread) and bake in batches in middle of oven 10 minutes, or until pale golden around the edges. cool cookies on sheets 2 minutes and transfer to a rack to cool.
 
Notes:
used coarse corn meal as that's what i had. Lottie + Doof used fine cornmeal so will see how it turns out.

used extra virgin olive oil for the butter which made for a drier cookie but still amazing flavor. possibly half olive oil and half butter, next time?

you can freeze the uncooked dough and store in freezer for that quick hot cookie fix. i place the dough balls on a cookie sheet lined with parchment paper and freeze until they are set enough that they don't stick together. takes about an hour or 2. store in ziplock freezer bags. i pop them out of the freezer and straight into the oven. you might want to adjust the oven temperature down 5-10 degrees and/or increase the time, a bit, to ensure that the cookies are properly baked through. i've never really had to adjust but there might be a difference from oven to oven
