cheese pennies / straws

yields: 80 1½-inch cheese pennies
Ingredients
1 1/2 c (6.75 oz / 190 g) all-purpose flour
1/2 c (4 oz / 115 g) unsalted butter, frozen and grated
2 c (8 oz / 227 g) extra-sharp cheddar cheese, grated
3/4 tsp table salt
1/2 tsp dry yellow mustard
1/8-1/4 tsp cayenne pepper (adjust according to whether you want a hint or a whallop)
1 tbsp cream
paprika (optional)
 
Directions
1. in a medium-sized mixing bowl, combine all of the ingredients (except for the cream) to make a cohesive dough; sprinkle in the cream to help the dough to come together. sprinkle more if necessary. as soon as the dough starts to come together, gently pat into a rectangular shape; wrap and chill in fridge for about an hour. 
2. between sheets of wax paper, roughly roll dough into a rectangular shape and about 1/2-inch thick; turn, fold and roll. do this about 3 times. if the butter starts to melt, chill in the fridge in between rolling for an hour or so. this also helps relax the gluten, ensuring a more tender dough.
3. roll it into a 16-inch log about 1 1/2 inches in diameter. wrap the log in waxed paper or plastic wrap, and chill it in the freezer for 30 minutes. (if you want to freeze them for a longer amount of time, just make sure to remove them from the freezer about 30 minutes before you want to slice them.)
4. using a serrated knife, slice the log crosswise into 1/8-inch rounds. place them on an ungreased or parchment-lined baking sheet, leaving only about 1/2 inch between them; they won't spread much as they bake. sprinkle them with a bit of paprika, if desired.
5. bake the cheese pennies in a preheated 350°F oven for 15 to 20 minutes, or until they're just beginning to brown.
6. remove them from the oven, and allow them to cool on the pan for several minutes before transferring them to racks to cool completely.
 
Notes:
stiff dough with hard cheese and so little water.
