dark and stormy

a spicy highball that's not only the "national drink of Bermuda" but also a trademarked drink! bizarre...
Ingredients
2 oz dark/black rum
8 oz ginger beer
lime wedge (optional, but highly recommended)
special equipment
tall glass tumbler (about 8-12 oz)
 
Directions
1. in a highball glass filled with ice, pour ginger beer.
2. add rum. to retain a 2-tone distinction between the dark and stormy, carefully pour in the rum on the back of a spoon.
3. add twist of lime, if you so desire, and enjoy.
 
Notes:
ginger beer is not the same thing as ginger ale. recipe here for homemade brew.

other variations double the rum, with a ratio closer to 1:2. imagine this is a matter of taste depending upon which rum and/or ginger beer is used.

recommend using Gosling's Black Seal Rum (80 proof) and Barritt's Ginger Beer or Bundaberg Ginger Beer.
